LuaJIT downloads are broken

Description

LuaJIT downloads don't seem to work anymore, which makes sense given Mike Pall's insistence that LuaJIT releases are rolling.

I would submit a change to fix this, but I see friction between the ethos of ASDF, and the ethos of LuaJIT.

I see a few options:

1. Exclude LuaJIT entirely and put a note into the README as to why
2. Include LuaJIT 2.0 and 2.1, note the rolling release friction, and leave it to the user to uninstall / reinstall as needed.

Any thoughts on how to proceed?

I'm inclined to go with option 2. I do think LuaJIT is support in this plugin is useful, but I agree it doesn't fit into the more deterministic versioning expectations of asdf.

@Stratus3D Cool! Makes sense to me. I'll take a crack at this in the next week or two.

These are the two options I see:

1. Download zips from the 2.0 / 2.1 branches from the GitHub mirror, unzip, and build using make.
2. Follow LuaJIT instructions exactly, which would require git as a dependency then build with make.

The first option is obviously easier because it fits into the current paradigm util set and doesn't require big changes, while the latter is ostensibly more aligned with Mike's intentions, but introduces a new dependency.

Either way on dependencies, I can add any non-obvious dependency information to the README accordingly if you think that would be helpful, particularly if anything in the Makefile is present in the banned commands.

Do you have a preference for either approach or an approach of your own? I don't think it makes a particularly big difference, but I lean towards #2 since that gets close to LuaJIT philosophy while maintaining asdf-vm philosophy.

I agree option 2 seems best if we can get the 2.0 and 2.1 tags/branches from Git.
