core: Remove Unstable*PluginOptions types

Removes UnstableVitePluginOptions, UnstableWebpackPluginOptions and UnstableRollupPluginOptions from @sentry/core once no SDK references them, and adds the v11 migration guide entry.

Lands last in the stack. Breaking change.
