Rename LLM Observability data source

What does this PR do? What is the motivation?

Renames the "LLM Observability" data source to "Agent Observability" in the analysis monitor "Supported data sources" list, keeping the docs consistent with the product naming change introduced in https://github.com/DataDog/web-ui/pull/333473.

Changes

• In content/en/monitors/types/analysis.md, under "Supported data sources", changed the - LLM Observability list entry to - Agent Observability.

• Verified LLM Observability had a single occurrence in the file and that it was the "Supported data sources" list entry before editing.
